The summer is OVER! Well, the fun part of it is- the part where its blazing hot 24/7 and I still can’t wear pants is still alive and well! 🙂 But my boys are all back in school so it’s just me and pretty little miss together all day and it feels like summer is scooting its way on out. Most days my life looks NOTHING like I imagined, and somedays I am sitting in bed painting my little girls toes and its just like WOW I always imagined this and its right here happening! Hey friends! We LOVE hummus around here, but we are a busy family so we tend to keep it pretty basic and easy, so this recipe is simple – but delicious! INGREDIENTS 2 cans of chick peas, rinsed 3 garlic cloves 2 tbsp olive oil (I love the flavor of THIS ONE!) Juice of 1 lemon (about 2 tablespoons) 1/2 tsp cumin 1/2 tsp paprika 1/2 tsp salt 1/8 tsp pepper 1/4 cup cold water 1/4 tsp chives for garnish DIRECTIONS Blend all above ingredients in food processor or blender, and enjoy with fresh veggies, crackers, pita bread, etc!
Summer is for grilling! We are loving our summer evenings and late dinners together. We have been so lucky to try out some new sauces this summer from Hunter’s Sauces. They have some amazing flavors and we have been using new ones each night for dinner! Here are a few of our favorite Country Boy: This was prob our favorite, we brushed all of of our chicken and veggies with this before grilling and it was the perfect amount to add flavor to our Summer Shish Kabobs. We used peppers, zucchini, corn on the cob sections, onions & chicken and grilled the kabobs for 15 minutes. One great way to get your water intake up is to infuse water! I have a million different combos but lately I have really loved lemon & strawberry. Its fresh and simple and so good! I mix my water up in my favorite tumbler found HERE I recently started adding Forte Elements into my water in the morning. It is an amino acid supplement. Amino acids are essential for repairing muscle, giving you energy, boost immune function, prevents against infection, and more. I really like the flavor, the lemon lime 30 pack is my favorite. Summer is for grilling right!? This is one of my new favorite recipes to make on our Traeger Grill! INGREDIENTS 4 chicken breasts 1 cup BBQ sauce (Tessemaes is clean!) 1 can sliced pineapple 1/2 cup pineapple juice (I used this from the can) 2 large sweet potatoes (as wide as you can find!) 4 tbsp avocado oil 2 tsp garlic salt DIRECTIONS Start Traeger on Smoke, lid open, until the fire is established (4-5 minutes). Coat chicken breasts in 2 tbsp avocado oil & garlic salt Increase the temperature to 450F and let Traeger preheat, lid closed, for 15 minutes. Place chicken breasts on the hot grill and cook 25 – 30 minutes, depending on breast size. Mix BBQ Sauce & pineapple juice. Cut sweet potatoes and coat with 2 tbsp avocado oil & garlic salt 15 minutes before the chicken is done, splash on the 3 BBQ Sauce mixture. Remove from […]
Clean Cilantro Lime Ranch Ingredients: 1 cup clean mayo (see recipe below) 1/2 cup canned coconut milk 1/2 tsp onion powder 1 tsp garlic powder 1 tsp fresh dill 1/2 tsp sea salt 1/2 cup cilantro 1 lime, juiced Directions: Mix all ingredients into the Clean Mayo & enjoy! Clean Mayo Ingredients: 1 room temp egg 1/2 fresh lemon juice 1/2 tsp salt 1/2 tsp dry mustard 1 cup avocado oil Directions: Break egg first, add lemon juice, salt & mustard directly on top of the egg and use an immersion blender to mix it up. Slowly add the avocado oil, slow is key! The slower, the frothier. Take about 2 minutes to get it to the desired consistency.
Baked Salami Caprese Cups Ingredients: 36 slices of salami 1 cup diced tomato 1/2 cup sliced olives 1/2 cup fresh basil Balsamic glaze Directions: Press 3 slices salami into muffin tin to fill the cup. Bake at 400 for 10 min. Mix together the remaining ingredients. Spoon mixture into cups, drizzle with balsamic glaze & enjoy! Side note, you could easily add mozzarella if you’re not eliminating dairy like me.
Lemon Grilled Shrimp Salad Ingredients: 2 pounds deveined shrimp 2 tbsp salt 1/4 cup avocado oil 1/4 cup parsley 2 cloves garlic, minced 2 lemons (juice of & zest!) Directions: Mix all ingredients in plastic bag together and let sit for 2 hours in the fridge. Skewer shrimp onto sticks. Grill on high for 5 minutes with the lid closed. Toss on salad & enjoy! For dressing for the salad I use a lemon garlic dressing.
Sunday Smoked Salmon Ingredients: Salmon Lemon garlic dressing Course salt Directions: Brush salmon with dressing & sprinkle with salt. Smoke at 325 for 25 minutes.
Easy Veggies Ingredients: Avocado oil Salt & pepper Veggies of choice Directions: Almost all veggies can be roasted at 425 for 25 minutes! Modify as desired with garlic, cumin, etc.
5 Minute Instant Pot Potatoes Ingredients: 10 red potatoes 4 tbsp avocado oil 1 tsp course salt 1 tsp minced garlic 1/2 cup chicken stock 2 tsp fresh parsley Directions: Wash and cut potatoes into quarters. Turn Instant Pot to Saute Mode. Heat oil, garlic and start browning sides of the potatoes. Top with salt. Pour in chicken stock. Set to manual mode, cook time 5 minutes. Once time is up, quick release steam. Top with fresh parsley and ENJOY!
Garlic Rosemary Beef Tenderloin Ingredients: 1 pound beef tenderloin 1 spring fresh rosemary 1 tsp minced garlic 1/2 cup salt Directions: Mix salt, finely chopped rosemary, garlic together. Massage salt mixture into beef tenderloins. Sear each side of the beef. Bake at 435 for 15 minutes to start, until internal temp reaches 145. You can cook longer if you prefer more well done. Extra squeeze of fresh lemon on top of desired.
Chocolate Chip Banana Pancakes Ingredients 1 cup pancake mix 1 cup milk 1 egg 2 bananas 1 tsp vanilla 1/2 c chocolate chips Directions: Mix all ingredients together and heat over a lightly buttered griddle. Serve with more chocolate chips, bananas and whipped cream!.
No-Bake Energy Bites Ingredients: 2 cups oatmeal 1 cut peanut butter 1/2 cup honey 1 scoop vanilla protein powder 2 tbsp chia seeds 1 tbsp flax seed 1 cup chocolate chip Directions: Mix all together & shape into balls. Refrigerate then serve! They last all week!
Blueberry Banana Antioxidant Probiotic Shake Ingredients: 1 cup almond milk 1 cup spinach/kale (any leafy greens!) 1 cup frozen blueberries 1 banana 2 capsules of Silverferm prebiotic+probiotic (my absolute favorite for gut health) emptied and mixed into the shake Directions: Blend up and enjoy!
Crunchy Cinnamon French Toast Ingredients: 2 cups crushed Cinnamon Pebbles Rice Cereal 4 eggs 1/4 cup milk 6 pieces of whole wheat bread Toppings: Maple Syrup Sliced Strawberries Whip Cream Directions: Mix eggs and milk together. Dip bread on both sides into egg mixture. Dip egged bread into crushed Cinnamon Pebbles. Bake on griddle on both sides. Top with maple syrup, berries & whip cream. Enjoy!
