5 Minute Instant Pot Potatoes
10 red potatoes
4 tbsp avocado oil
1 tsp course salt
1 tsp minced garlic
1/2 cup chicken stock
2 tsp fresh parsley
Wash and cut potatoes into quarters.
Turn Instant Pot to Saute Mode.
Heat oil, garlic and start browning sides of the potatoes.
Top with salt.
Pour in chicken stock.
Set to manual mode, cook time 5 minutes.
Once time is up, quick release steam.
Top with fresh parsley and ENJOY!
