Turkey Spinach Lasagna

I made this on insta stories a few days ago and had tons of requests for the recipe so HERE YOU GO! xoxo

1 lb ground turkey

1 can Spaghetti Sauce (I love the garlic flavor!)

1 package whole wheat lasagna noodles (don’t cook!)

2 cups spinach

2 cups ricotta cheese

2 cups mozzarella cheese

1 cup parmesan cheese

Cook ground turkey, then mix sauce into it

Mix mozzarella and parmesan cheese together

Layer into a 9×13 pan

Sauce mix, noodles, ricotta cheese, spinach, moz parm mixture

(When you layer the noodles between sauce and the rocitta (another smooth cheese) it saturates the noddles while cooking and it wont need to be boiled before!)

Layer again Sauce mix, noodles, ricotta cheese, spinach, moz parm mixture.

Cover in tin foil

Bake at 400 for 45 min, then remove foil & broil for 5 min to brown cheese on top

Let sit for 10 minutes and then enjoy!

RC Willey 85th Anniversary

Justin and I have been furnishing our home with RC Willey furniture for years. We always have loved shopping there and feeling like we get that special one on one attention and of course love the quality. I think they offer such a good variety of items in different styles and prices too.

When we bought our house, the first thing we did was purchase this grey sectional from them. We loved the color and the design and its been such an inviting piece of furniture in our home to welcome friends and family and fit a lot of people on it for parties and gatherings.

This year my goal was to save up enough to purchase this entertainment center, and I was able to work with them and get this for our home and it was the statement piece we had been waiting for to pull this room together. We love the way it looks, its functions beautifully and also has display shelves as well as storage drawers for the kids toys. Its been perfect!

I wanted to let you know about this AMAZING 85th ANNIVERSARY GIVEAWAY they are running this week (it closes April 22!) where they are gifting $85,000 to families who are nominated. 85 families will be chosen to receive $1000 each. This is SO cool and with so many winners the odds are ever in your favor 🙂 You can enter HERE and do it quick!

This post was sponsored by RC Willey. All opinions are my own.

Sunny San Diego at Tower 23

Would you believe in almost 9 years of parenting we haven’t ever taken our kids to the beach?

Justin and I have been a few times, but each time we go its usually to relax and we don’t take the kids with us! Last year we went to California and made the promise to bring out kids back and we finally did it!

We were so fortunate to stay with Tower 23 in San Diego because the location is pristine. It was right on the beach. My kids would sit on our balcony and watch the surfers for hours, we walked the kids down the board walk, and walked along the beach every day we were there.

I loved how the hotel was so kid friendly, they had beach toys for the kids to use and were so kind to our family and accommodating. They were so helpful assisting us with directions, ideas of fun things to do and my kids loved being there.

We decided to get 2 connecting rooms so we had some space to spread out a little bit and I am glad we did because we were able to relax a lot in the room and spend time on the beach as well.

One of our favorite parts was the overlook, we loved the views. Tower 23 was the perfect location to take our kids to the beach for the first time and we can’t wait to come back.

We also had a great time at Sea World & San Diego Zoo while we were in San Diego, the kids loved seeing all the animals and we loved doing some of the fun family fun stuff too!

St George Sanctuary

You know the saying no one needs a vacation more than a Mom who just got back from vacation? YUP! haha

Well we are just over a week home and I am putting together a few blog posts to show you all what we experienced on our first week long family road trip.

We are tired, but we found when we changed the word “vacation” to adventure – we all felt better about it!

We started our road trip with a Stop in St George to stay at the Inn at Entrada. We were blown away with the views. The red rock was on full display out our condo window and was a gorgeous backdrop to our first day of travel.

We took the kids swimming, we ordered Pizza and watched a movie, and we had so much space to relax and spend time together.

In the morning we took a walk through their golf course and got to see more of the grounds.

We really loved staying at the Inn at Entrada. If you are traveling through St George or wanting to spend a few days – its the perfect place!

Just Peachy Baby Bows

I have been a fan on Modern Piggy baby bows for years now so when they asked me to design a line for them I said yes right away!

My little girl is a bow baby, she wears the every day and  Modern Piggy is one of my favorites for quality and just plain cuteness!

When we worked together to come up with some spring fun bows, I thought it would be so fun to incorporate a foodie theme, because thats my jam!

My mom used to always reply “Just Peachy!” when anyone asked her how she was doing, so this line is kind of dedicated to her!

The Just Peachy Modern Piggy + Ashley’s Fresh Fix Collaboration has 3 colors

“Peachy Keen”

“Spring Clean”

“Sweet Pea”

I was so lucky to round up all 8 of Mabel’s girl cousins for a fun photoshoot and show off these bows!

You can shop any of these bows over at Modern Piggy, and I can’t wait for you to pick some up!

A Weekend Away with Zermatt Resort

If the gelato isn’t tempting enough, let me tell you a few reasons why we chose to take a vacation weekend in Midway, Utah at the Zermatt Resort!

Luckily for us, Midway is just about an hour from home. But even if you don’t live that close- this Resort is worth the trip.

The Zermatt Resort is a peaceful property in the mountains. Its gorgeous, calm and peaceful. It has the special cozy vibes so you can really focus on the people you are traveling with and not be distracted.

We went to go check out their Spring Break package. We got to stay in their 2 bedroom suite, which had plenty of room for our family of 6. We got free gelato from their Bakery each day which we all loved (Nutella was my favorite!), and we got to take the kids to a movie night with a bunch of other kids. The boys had so much fun watching a movie and snacking on popcorn.

Here are our top 5 activities with kids in Heber/Midway

  1. The Carousel at the Zermatt is free so the kids loved taking a few laps there!
  2. We also loved touring the resort, the kids got to see lots of little animals running around and they LOVED the pool. Its half indoor, half outdoor and the kids spent a lot of time swimming,
  3. We took the kids on the Heber Valley Railroad Train trip for a 2 hour trip through Heber Valley. The kids loved cuddling up on the train!
  4. We wish we would have made reservations for swimming, so next time we know we need to! But this weekend we still were able to walk down to the Crater and take a peak inside. Its mysterious and gorgeous!
  5. Last but not least – the gelato! That was my kids highlight each day, walking down to the bakery to pick a new flavor.

We loved our time at the Zermatt Resort, we would encourage anyone to go check it out especially during their Spring Break specials!

Harvest Snaps in a Snap

I have had so much fun working with Harvest Snaps this month. It was a new product I hadn’t tried before but I was so excited to find a flavorful, gluten free crunchy snack and had a blast finding fun ways to use them!

Don’t get me wrong, they are JUST as good  out of the bag as a snack – but here are some other fun ways you can use your snaps, in a snap!

First off, I love using them as a healthy sub option for croutons! It adds that extra crunch to salads.

Processed with Snapseed.

I also used them to top our favorite Butter Nut Squash Soup, you can see the full recipe HERE!

Processed with Snapseed.

We love making tacos as well, and adding Harvest Snaps was so fun to give our Blackened Salmon Tacos even more crunch. We also loved the spicy flavor!

Processed with Snapseed.

Last but not least we made a really yummy dip for the Harvest Snaps!

1 cup Greek Yogurt

1 mashed avocado

1 package dry ranch mix

Mix together, and use for delicious dipping!

Processed with Snapseed.

I hope you can try & enjoy a few of these recipes!

Thanks for watching!

Roasted Butternut Squash Soup

Roasted Butternut Squash Soup

Cubed butternut squash (I buy the precut package at Costco)
10 diced green onions
Avocado oil
2 cups chicken broth
1 cup blended canned coconut milk
3 tbsp balsamic vinegar

Toss cubed squash with green onions & a little avocado oil.
Roast at 425 for 30 minutes.
Remove from oven & blend all ingredients in a blender.
Return to pan & add chicken broth, coconut milk, & balsamic vinegar.
Cook over medium heat for 10 minutes.
Top with crumbled bacon, green onion & a swirl of coconut milk.
My new favorite topping is snap pea crisps for a healthy crunch!
